Does Aurora use real fruit?

Yes, always.

Aurora is, and will always be, made with real fruit, not imitation fruit fillings, synthetic fruit centers, or artificial substitutes pretending to be fruit. This distinction is precisely what shapes our fresh and premium flavour.

We stand for premium indulgence at every stage of the production process, and that starts with using only the best whole freeze-dried fruits available.

What does freeze-dried fruit mean?

Freeze-dried fruit is real fruit, picked at its peak ripeness, that has had its moisture removed in a freeze-drier with ultra-cold temperatures and low pressure systems.

Unlike traditional dehydrated fruit, which is leathery and chewy, freeze-dried fruit is intensely flavourful, exceptionally crisp, and ultimately light. 

For Aurora, freeze-drying is the process that makes the entire experience possible. Without it, there would be no signature crunch, no airy bite, and no uniquely light indulgence.

What is freeze-drying, and why does Aurora use it?

Freeze-drying is an advanced food preservation process that transforms foods (including fresh fruit) into crispy, crunchy snacks while preserving their nutritional value and intensifying their flavours.

How it works:

Fresh fruit naturally contains a large amount of water. In freeze-drying, the fruit is frozen at ultra-cold temperatures, which locks its structure into place.

It is then placed under carefully controlled low-pressure conditions, where the ice inside the fruit doesn’t melt into liquid water as it normally would. Instead, it undergoes a process called sublimation, where the ice transitions directly from a solid to a vapor. 

The sublimation process is the key element that creates the difference. Traditional drying methods often collapse the fruit’s structure, creating something dense, leathery, or chewy. Instead, freeze-drying preserves the fruit’s natural architecture, creating a texture that is exceptionally light, delicately crisp, intensely flavorful, and uniquely airy.

Importantly, because all the water is removed, the original fruit is left with an intensified flavour that serves as the perfect complement to our various chocolate coatings.

It’s also what makes the experience so different from traditional chocolate-covered fruit. Instead of a soft, juicy center, Aurora delivers a crisp burst of real fruit wrapped in smooth Belgian chocolate.
